Dinner and staying on: Panthera
We will start at home. Panthera, on Calle de Miguel Ángel 21, is a Dinner and Dance restaurant: an international menu with Nikkei, Mediterranean and Latin influences, black panthers in the decor, low lighting and an international crowd. At midnight the room becomes a club and the tables turn into private celebration areas. It is the pick if you do not want to move on after dinner. Everything is on the menu and in what to do in Chamberí at night.
Salamanca: the Grupo Paraguas classics
Amazónico, Ten Con Ten, El Paraguas and Numa Pompilio all belong to Grupo Paraguas, and between them they cover very different styles. El Paraguas (Jorge Juan 16) is where the group started in 2004, with creative Asturian cooking and a reputation as a classic for business lunches. A few doors down, Amazónico (Jorge Juan 20) combines Amazon-inspired cooking, a Japanese bar and jungle decor, with live jazz every night in The Jungle Jazz Club. Ten Con Ten (Ayala 6) goes for cosmopolitan cooking with a cocktail bar, greenhouse and library. And Numa Pompilio (Velázquez 18) is classic Italian in baroque-style dining rooms, with its own pasta workshop.

Along the Castellana and nearby
The Castellana is home to some of the city's best-known tables. Zuma (Castellana 2) brings the contemporary izakaya format, with a main kitchen, sushi counter and robata grill. Chambao (Castellana 4) calls itself a «Fashion Grill House», with meat and seafood and a DJ, catwalk shows and performances every night. Tatel (Castellana 36) pairs upscale Spanish cooking with art deco styling and live music every day of the year.
A little further south, by the Puerta de Alcalá, Ramses (Plaza de la Independencia 4) offers Mediterranean cooking with international touches, a terrace and a champagne bar, with interiors by Jouin Manku. At the other end of the district, SLVJ Velázquez (Velázquez 62, inside the Bless Hotel) serves signature Japanese food with Latin touches from chef Fermín Azkue, with a DJ and performances during dinner.
Chamberí: Sala de Despiece
In Chamberí, besides Panthera, Javier Bonet's Sala de Despiece moved to Calle de Alonso Cano 28 in 2024 (it used to be on Ponzano 11). It applies the look of a butcher's cutting room to produce-led cooking, with counter and table seating.
